On the last episode of "pickled peppers", we heard Lee say to All:

LF> Hi all. Its time to pick the hot peppers, Bannana, jalapeno, LF> cherry. Has anyone have family tested pickeled hot pepper recipe ? LF> I would like to make the kind you use on sub sandwiches.

Haven't made these in years, but here's how Grandma did it. Pack whole peppers into clean, sterilized jars, adding one crushed clove of garlic and a teaspoon or so of oregano to each jar. Pour boiling vinegar over the pepper mixture, and seal.

For hotter peppers, prick each pepper in 3-4 places with a fork before placing in the jar.

Note: I don't believe my grandmother ever processed these, and the amount of vinegar in the recipe MIGHT make this method safe, but I wouldn't chance it. I'd either pressure can it or at least use a 15 minute hot water bath.
